补充资料：多获性鱼贝类鱼糜制品
能充分利用多获性表层鱼类和多获性底层鱼类及贝类、甲壳类，加工生产的鱼糜食品，解决了用其它方法使用这些原料生产鱼糜食品所出现的颜色、臭味、ph值降低、残留的脂肪变质等一些问题，生产出的制品质量好，有口感与风味。 制作方法 从鱼贝类中采取各可食部分的肉质、然后添加其重量5～50%(最佳为10～30%)的生鲜蛋白，再加入少量食盐、酱油、味精、砂糖、酒、粘合剂、油脂类、淀粉、核酸类等调味料，亦可加入一些畜肉、植物蛋白、明胶、增强剂等。将这些原料混合，用擂溃机加以擂溃，再用成形机制成各种形状后，置于-6～-20℃的低温处缓慢冻结约5～50小时，然后按其大小用90～100℃的温度迅速加热10～60分。如此制得的产品即可出售，或经再加工制成冷冻食品及罐头等。 这种方法的关键在于加入适量的生鲜鸡蛋白，以起到凝集作用，并使鱼肉蛋白形成网状结构以强化组织，还可阻止鱼肉蛋白因冷冻引起变性。蛋白可以使用新鲜蛋白，也可以是浓缩蛋、干燥蛋白、冷冻蛋白、加盐蛋白等，或者是其它禽类的蛋白。采用的原料，除了白身鱼、红身鱼和底栖鱼、回游鱼类外，各种虾蟹等甲壳类、贝类、乌鱼等均可单独成搭配使用，若按用料鱼的脂及含量、蛋白质成分、组织状况等加以合理地调配，则效果更佳。 实例1 将12月份在日本八户海捕获的鲐鱼100公斤，除去头、内脏洗净后，用采肉机采得粗脂肪含量为23.2%的鱼肉51.2公斤。取其10公斤加入冷冻蛋白2公斤，食盐200克，其它的调味料430克，用擂溃机擂溃后，注入厚度60毫米冷冻容器中，置于-15℃的低温处缓慢冷冻2天，再取出切成10毫米厚的薄片，最后用蒸煮机蒸煮15分钟，即得成品10.7公斤。 实例2 将冬季在北太平洋捕获的鲽类100公斤，在船上进行采肉并保留部分内脏，然后加1公斤含水9%的干燥蛋白(相当于7.3公斤的鲜蛋白)，2公斤山梨糖醇，100克聚合磷酸盐，混合后用-30℃低温冻结，得到37.2公斤的冷冻肉。 将上述的冷冻肉运到陆地解冻后，加入狭鳕和虾肉各3.5公斤、淀粉700克、食盐1000克、其它调味料120克、香辛料20克，用擂溃机擂溃后注入厚30毫米的冷冻容器中，经-13℃一夜的缓慢冻结后，再用-25℃急剧冻结。最后用沸水加热20分钟，用切片机切成厚8毫米的薄片，即得到35公斤有良好食感与风味的食品。
