【原料】
鲥鱼一条（约1250克）。精盐10克、白糖10克、料酒50克，花生油50克、葱、姜醋汁、胡椒粉少许。
【制作过程】
将鲥鱼开膛去内脏，掏去鳃，剪去划水，洗净，放在长鱼盘内，加入料酒、精盐、白糖等调料，使鱼身两面沾匀。将鱼放入铁烤盘内，鱼下铺垫葱、姜，送进烤炉内，用中火烤。烤时要随时注意观察火候。视鱼向火的一面烤到八成熟时，翻一个面继续烤，约烤15分钟左右，烤至鱼身呈金黄色，即可盛入鱼盘上桌食用，随上姜醋汁一小碗。
【特点】 颜色金黄，外皮酥脆，肉质鲜嫩，风味独特。
