原料配方
上等面粉500克 化猪油300克 内江蜜枣(去核)250克 玫瑰25克 桃仁100克 白糖100克 菜油750克(耗100克) 沸水350克
制作方法
1.将上等面粉倒入350克沸水锅中烫熟，加上化猪油100克揉匀，然后铺开切成数块，晾至不烫手。
2.将蜜枣、玫瑰、白糖、化猪油100克混合揉匀成为枣泥。桃仁放入沸水泡后去皮，下油锅炸酥，剁成绿豆大的颗粒与枣泥拌匀，捏成20个球形馅心。
3.烫好的面揉为1团，将化猪油100克分数次揉匀于面中，再把面扯成20个剂子，按成圆饼形，放入球形馅心捏拢，在交口处轻轻拍平，即成波丝糕坯。
4.将菜油750克放入锅，待烧至八成熟时，从锅边徐徐放入糕坯，炸至饼皮呈网状时即可。
产品特点 色金黄，皮酥脆，馅香甜。
