原料
鸡蛋液150克，水发鱿鱼35克，去皮鱼肉100克，水发冬菇40克，去皮猪肉325克，精盐6克，味精3克，白糖1克，干淀粉100克，花生油1250克（耗约125克）。
制法
（1）将猪肉、鱼肉、鱿鱼、冬菇分别剁切成黄豆大小的粒状，分别盛入碗中。把鱼肉粒放入盆中，加入精盐、味精、白糖拌匀，搅至起粘加入猪肉粒，再加入鱿鱼粒、冬菇粒和鸡蛋液35克，继续搅拌至起粘，即成馅心。
（2）用中火烧热炒锅后，端离火口，用竹刷在锅口上薄薄地刷上一层油。将鸡蛋液115克倒入锅心，手持炒锅转动，烙成厚薄均匀的圆片（直径约23厘米），随即在微火上煎成浅黄色的蛋皮；然后把锅端离火口，将蛋皮轻轻揭起，煎的一面向下，放砧板上切成4块。在蛋皮上分别放上肉馅，卷成圆条形，再斜着横切为菱形块，共36块，用手轻捏使蛋皮与馅料粘得更紧。
3:用中火烧热炒锅,下油烧至五成热,将蛋卷逐块下锅,约炸2分钟至蛋卷外皮微硬时将锅端离火口浸炸约1分钟.再将锅放回炉上,将蛋卷炸至脆硬呈金黄色后用漏勺捞起,沥去油装盘即成。
特点
此系东江风味菜，色泽金黄，皮脆肉嫩，味道鲜咸，清香爽口。
