原料配方
吊浆粉(大米水磨粉)500克 白糖200克 酵种(即发酵的糕肥)5克 泡打粉10克 玫瑰红色素、碱水适量
制作方法
1.将吊浆粉50克放入容器，加少量清水混和，成为稀度适宜的稀浆；锅架火上，放水100克烧开，将稀浆倒入，煮成熟糊，冷却后即为“熟芡”。将450克吊浆粉放入容器，加入“熟芡”、酵种和清水100克拌匀，揉搓至滑软程度，放入瓦盆，发酵12个小时左右，加入白糖拌匀，待糖溶化，即加入泡打粉和碱水拌匀揉透，便成白生糕浆，取出一半加入玫瑰红色素调匀，即成红色生糕浆。
2.蒸笼上锅并架在火上，屉内放洁净白布，先倒入白色生糕浆，用旺火，沸水蒸30分钟左右，再把玫瑰红色糕浆倒在上面，继续蒸30分钟左右即成。
产品特点 红色两色，绵软松泡，细甜爽口，富有弹性。
