【特点】 （甜菜）潮洲菜
【原料】
枇杷（２４个，约１２００克）、沙糖（４００克）、白肉（１５０克）、菱粉（少许）、甜冰肉（１５０克）、糖冬瓜（１５０克）、炒香芝麻（５０克）、糕粉（５０克）。
【制作过程】
一、将甜冰肉、糖冬瓜均切成幼粒，加入炒香的芝麻和糕粉，拌匀，即成水晶馅。
二、把枇杷去净皮，上面用刀切平，去核，把水晶馅酿在枇杷肚内，用少量干菱粉无动于封口。
三、起镬，下白猪油，把枇杷放入炸约一分钟捞丐，然后将糖４００克和清水６００克煮成糖水。再把枇杷放入,在木炭炉上慢慢煲约五十分钟.食时,把枇杷捞起落碗,原汁加入少量湿菱粉煮熟淋上即成.
