简称粤菜。源于西汉。《淮南子》载:“越人得蚺蛇以为上肴”。南宋《岭外代答》也说越人“不问鸟兽虫蛇,无不食之”。宋末王朝南迁,众多御厨骤集羊城,促成了粤菜的长足发展。今粤菜已名播中外,有“吃在广州”之说。粤菜主要由广州、潮州、东江三种地方菜组成。擅长爆、炒,多变化,配料丰富,讲究鲜、嫩、爽、滑。潮州菜以烹制海鲜见长,汤菜更具特色。刀工精细,口味清咸。粤菜对鱼虾、禽兽、野味等烹制均有特长,尤其对蛇的制作,更有独到之处。其名菜有豹狸烩三蛇(俗名龙虎斗)、片皮乳猪、潮州冻肉、东江盐鸡、满坛香、鼎湖上素、大良炒牛奶、炒田螺等。
