原料：桂鱼、胡萝卜、红樱桃、淀粉等。
制法：取桂鱼中间鱼肉批成大薄片腌入味，胡萝卜切成细长条，过油，用鱼肉片圈成马蹄花样，中间插一根胡萝卜细条，上笼6分钟，鱼嘴中放入一段硬物，同鱼尾一起上笼蒸熟，装盘，原汤汁加入少许鸡汤，盐，味精勾芡，淋色拉油。再用红樱桃点缀鱼眼和鱼嘴即成。
特点：色泽洁白，香润腴美。
