国际糖组织（InternationalSugarOrganization，ISO），是《国际糖协定》的管理和监督协定执行的机构，是根据《1968年国际糖协定》建立的，并取代了国际糖理事会。其宗旨是确保世界糖市场的秩序性和稳定性。其职能包括：收集和发布有关世界原糖、精炼糖和其他甜料的生产、价格、进出口、消费和储存、税收的统计信息。为此，专门建立了一个对糖的市场评估、消费和统计委员会。国际糖组织的执行机构有：理事会、执行委员会。总部设在英国伦敦。
国际糖组织拥有成员63个，代表了世界食糖产量的81％，消费量的63％。包括古巴、澳大利亚、阿根廷、匈牙利等46个出口国或地区以及美国、前苏联、日本等14个进口国或地区。俄罗斯联邦2003年1月7日加入了《1992年国际糖协定》。目前，中国还不是该组织的成员，但应邀以观察员的身份参加过国际糖组织年会。
