主料：鲈鱼
辅料：鸡腿菇、菜心、鸡蛋清、野山椒末、青红椒粒
调料：盐、料酒、白糖、胡椒粉、山椒水、鸡精、水淀粉、蒜茸、葱姜节、高汤、鸡油、食用油
烹制方法：
1、将鲈鱼去内脏洗净后，切下头尾用盐、料酒、蛋清、淀粉上浆入味，鸡腿菇洗净切成片，菜心摘洗干净；
2、坐锅点火放入油，油温4成热时放入菜心、鸡腿菇、盐、鸡精炒熟，菜心摆在鱼盘两侧，鸡腿菇放于盘中；
3、坐锅点火放入油，油温4成热时，放入鱼片滑散捞出，锅内留余油，放入蒜茸、山椒末炒出香味时倒入适量高汤、盐、胡椒粉、山椒水、白糖、鸡精、鱼片炒匀，用水淀粉勾芡，撒入青红粒，淋入鸡油出锅倒入盛有鸡腿菇的盘中即可食用。
特点：色泽明快，鱼肉细滑，蘑菇脆嫩。
