主料
龙虾(小)3/2斤(约900克),粉丝2两(约80克),洋葱1个,蒜头2瓣(切茸),绍酒1茶匙,生粉1汤匙(加水2汤匙),油6杯。
配料
粉丝煨料:清鸡汤、水各1罐(约250毫升),盐1/2茶匙,糖1/8茶匙,油1/2汤匙。
芡料:洋葱汤1罐,水1/4杯,盐、糖各1/4茶匙,胡椒粉、麻油各少许。
做法
1、粉丝用清水浸约15分钟至软,沥干水分。洋葱去衣,切件。
2、用筷子插入龙虾尾部,使放净尿,宰好,洗刷干净,沥干水分后斩大件;泡油前洒上生粉。
3、粉丝放入煮滚煨料中煨3-5分钟,沥干水分。
4、烧热油6杯,放入洋葱泡嫩油,盛出,随即放入龙虾泡片刻,盛出,沥干油。
5、用半汤匙油爆香蒜茸,洋葱、龙虾回镬,炒匀,洒入酒,注入调匀的芡料煮滚,上盖,改用慢火焗约3分钟,慢慢注入水溶生粉,兜匀至汁稠。
6、砂锅内烧热半汤匙油,顺序放入粉丝、龙虾,上盖煮约2-3分钟,即可供食。
