材料 :

小型游水石斑两条打理干净,姜数片,姜丝一大匙,葱数段,葱丝三大匙。

调味料 :

1、生抽两大匙,老抽一大匙,味精少许

2、清油两大匙

做法 :

1、在鱼身肉厚处划两刀,夹入姜片,葱段。蒸盘底摆上数段葱(以便蒸时热气流通),将鱼摆入盘里。锅里水大滚后将蒸盘摆入,隔水开旺火蒸5分钟即可。将鱼取出另行装盘(蒸鱼汤汁,姜片,葱段皆弃用)。

2、将葱丝,姜丝摆鱼上,淋上调味料1;油烧热,淋于葱姜丝上即可。

3、用的这种白玉嫩豆腐很容易出水,边吃边出水会影响口感和味道,所以打了一个鸡蛋,加半碗高汤,少许盐,味精,加入嫩豆腐里入锅以旺火蒸熟。这样一来,豆腐的水份被蛋羹裹住,不易流出。蒸鱼摆盘后,将豆腐摆入盘中吸取调味料和葱姜油的香味,味道很好。
