【原料】
豆腐干150克。 烧鸭100克。盐5克、姜10克、葱15克、烧酒5克、熟酬30克。
【制作过程】
豆腐干放入水锅中，加精盐稍煮，捞出放在案板上压紧，去除水分，然后批片成细丝，放入碗中，用沸水烫泡三次，去尽黄腥味。生姜去皮，切成细丝泡入清水碗中。烧鸭去骨，批片切丝，烧鸭骨斩成块。炒锅上火烧热，放油，投入葱姜煸香，放入鸭骨，烹入烧酒，加清水，用旺火煮汤。锅置火上，将煮好的鸭骨汤用筛过入锅中，放入干丝略煮，加入烧鸭丝、精盐，煮10分钟后加入熟鸭油，起锅装入凹盘中，摆上生姜丝即成。
