原料:[糯米面][面粉][碱面][花生油][饴糖]
掌故说明:
北京颇具特色的风味小吃,蜜箅子因形如竹箅子而得名。其色金黄油亮,面含饴糖,绵软不黏,甜蜜味香。
制作方法:
将碎老酵用温水调稀,加入糯米面及面粉和匀,盖上盖放上2小时即可发酵;把碱面用开水溶化,与花生油一起倒入发面盆中和成面团,再摘剂抟成圆球形,按成直径二寸五分的圆饼;用刀在圆饼中间并排切七八个小口,两手把圆饼拿起,轻轻触动饼的中心,刀口裂开;将圆饼放入烧至五成热的花生油锅中,炸至两面呈金黄色时捞起,沥净油,入糖锅中浸透饴糖,捞出晾凉即可食用。
