主料
角螺2500克、方鱼末10克、蒜泥50克、红辣椒0.5克、味精3克、鱼露7.5克、胡椒粉0.5克、芝麻油1克、绍酒10克、湿淀粉20克、上汤35克、生油800克（耗100克）。
做法
1、将角螺敲破外壳，取出螺肉，洗去污物和内脏，去掉螺厣和头部硬肉，每只切成两片，在肉面上磺刀刻纹后，冲洗干净，用洁净毛巾吸干水分，然后用湿淀粉10克拌匀。红辣椒切成细粒。
2、用中火烧热炒鼎，下生油50克，投入蒜泥，炒至金黄色，盛入碗中，放入上汤、方鱼末、味精、鱼露、胡椒粉、辣椒粒、麻油和湿淀粉、调成芡汁。
3、用旺火烧热炒鼎，下猪油750克，烧至五成热，放入螺片溜过油约1分钟至熟成螺球，倒入笊篱沥去油。炒锅放回炉上，把螺球倒入，烹绍酒，并迅速用芡汁勾芡，炒匀上盘即成。
特点
此菜肉质鲜爽，有浓郁的蒜香味。
