喇嘛糕(京式)
原料配方 鸡蛋42千克 特制粉26千克 砂糖34千克 桂花600克 白油2千克
制作方法 1.打蛋:将蛋汁放入搅拌机内,加糖搅打(将机器调到快档,以便充分搅打),待蛋液呈乳白色,液面有蓬松泡沫,体积增大,便可投入面粉搅打。注意打蛋时间不宜过长。
2.搅面、灌糕:将面粉缓缓投入打蛋机内,将机器改为慢档搅拌至匀,此时面糊已形成均匀蜂窝状结构,即可灌糕。将糕糊迅速灌入已刷过油的模具中,装屉入蒸箱蒸制。注意糕糊应随调随用,放入面粉调制时间不宜过长,以防糕糊上劲。灌糕用模具每次用完应清除残渣,上油备用。
3.蒸制:蒸制开始时,先通以少量热汽,约3~4分钟后再加大汽量至0.5千克/厘米2,经12~15分钟,即可成熟,出锅。
4.冷却:将屉中产品挑出装箱,打一红戳。该产品含水较多,应充分冷却再入库。
质量标准 形态:圆形或圆底六瓣形,鼓状,无气泡,不卷边,无坑点,块型整齐。
色泽:呈蛋黄色,戳记清晰,色感鲜润。
组织:绵软不粘,有弹性,蜂窝均匀,无杂质。
口味:甜润利口,有桂花,蛋香味,无异味。
