性质:从小牛肝脏分离出来的丙酮酸羧化酶分子量为655 000,并含有锰(Ⅱ)和镁(Ⅱ)离子,但比例并不恒定,说明两种金属离子在酶分子中可以互相替代。由老鼠肝脏、火鸡和鸡肝脏得到的丙酮酸羧化酶只含锰(Ⅱ)离子,但如果在鸡的饮食中缺乏锰元素时,则可得到只含镁的酶。丙酮酸羧化酶需要生物素和乙酰辅酶A作为它的辅酶。丙酮酸羧化酶可以催化二氧化碳固定在丙酮酸上,生成草酰乙酸。
