作料:酱油、黄酒、水、些许味精、糖、胡椒粉。

做法:1、最好不要太大的鲫鱼,新鲜的。鲫鱼处理干净,挂起晾水;

2、不要晾太久,身子抹一遍芡粉(如果松鼠鱼等大做的菜式就用面粉),手拎着尾巴滑入滚油中煎,小小地用铲子浇油上去,这样不会破皮。煎至两面焦黄,起锅滤油,热鱼见风就会酥脆。

(其实这会儿你想吃生煎鱼,只要在鱼身上撒点盐花、葱花、胡椒粉、香菜碎、红椒丁就可以上桌了。)

3、锅里剩一点油,开火,加葱、姜、蒜、红椒,煸炒十秒钟;

4、将煎好的鱼平铺在配菜上面,加酱油、黄酒,大火煮沸;

5、翻身,加糖、胡椒粉、些许味精。加水,没过鱼身。盖盖,煮5分钟(少点也可以,熟了就好);

6、看到汁稠入味,起锅。鱼先起,再将配菜盖鱼身上。
