性质: 油脂中挥发性脂肪酸的一种计量。它等于中和5g油脂样品中的挥发性、水不溶性脂肪酸所需的0.1mol/L NaOH量(ml)。测定方法:以测定赖克特-迈斯尔值时所得到的馏出液,过滤后留在滤纸上面的残余物用水洗涤后,用乙醇[95%(体积)]清洗溶解。共进行3次,每次15ml。用0.1mol/L NaOH滴定,以酚酞为指示剂。
