原料
主配料:活蚕蛹500克、葱段5克、姜片5克。
调料:绍酒5克、酱油10克、白糖5克、味精1克、甜面酱20克、色拉油500克(耗约75克)。
制法
(1)将活蚕蛹洗净沥干,放入碗内加酱油、绍酒、白糖、味精、葱段、姜片,拌匀腌20分钟至入味。
(2)炒锅置中火上,加入色拉油烧至四成热,放入蚕蛹炸熟捞出,待油温烧至八成热,再放入蚕蛹复炸至金黄色,捞出沥油,装盘,盘边放上甜面酱佐食即成。
特点
色泽金黄,鲜咸入味,异香浓郁。
