为牛科动物山羊或绵羊的皮，动物形态详"羊肉"条。
【化学成分】
含水分、蛋白质、脂肪及无机物质，后两者含量很少。构成表皮层的蛋白质主要为角蛋白，构成真皮层的，主要是胶原及网硬蛋白。此外，尚含弹性硬蛋白、白蛋白、球蛋白及粘蛋白等。表皮常含多少黑色素，它是酪氨酸的代谢产物。网硬蛋白为构成网状组织的主要蛋白质，它和胶原构成皮的大部分。山羊皮的脂肪含量与其它动物(例如牛)相仿，但绵羊皮的脂肪则含量特多。
