蒜香烟肉蒸扇贝
扇贝是一种极为鲜味的贝壳，它的种类有很多，常见的有北方的栉孔扇贝和南方的华贵栉孔扇贝，广东沿海一带所产的叫“日月贝”，因它长期生活在海底，贝壳受到日照的那面呈粉红色，另一面则呈白色，两面壳的颜色好像“日月”。
扇贝跟其他海产一样，都含有丰富的营养，有些地方的渔民用小扇贝和北芪煮汤，是一种保健的汤品。干贝也是扇贝干制而成的，它是海味中的“八珍”之一。
笔者认为，扇贝以蒸、煮为佳，食肆里常有“粉丝蒜茸蒸扇贝”和“金银蒜蒸扇贝”等菜肴，也有以酱汁烧焗的做法。其实，烹制扇贝着重火候，过火则会失真，当然鲜活更重要。
“蒜茸烟肉蒸扇贝”一菜讲究香口，这里选用西餐的烟肉，其烟味并非太浓，与蒜头相配可达和味。
原料：扇贝、烟肉、蒜茸、红椒(切粒)、葱花、花生油、盐、味精、绍酒、麻油、胡椒粉。
做法：将烟肉切碎，开镬炒香，沥去油分备用。用刀起出扇贝的一边贝壳，去掉脏物，洗净备用。将炒香的烟肉、蒜茸、红椒、盐、味精、绍酒、麻油、胡椒粉均匀撒在扇贝上，淋上花生油，下镬蒸熟，撒上葱花便成。
提示：烟肉与胡椒味极配，选用原粒磨制的胡椒粉，可达更佳的效果
