红槽豆腐乳２块、芦笋１００公克
素肉片１５０公克
【调味料】
盐１大匙、太白粉１大匙
糖２大匙、酒１大匙、姜末１大匙
【要领】
口味淡的人，在腌肉时可以不必再
另加盐，因豆腐乳已有咸味。
【做法】
ａ、素肉片加水泡软后沥乾，籚笋
洗后切成约３公分长段，豆腐
乳倒出备用。
ｂ、籚笋段放入滚水中烫煮２～３
分钟后，捞起沥乾放凉。
ｃ、素肉片加红槽豆腐乳、姜末及
所有调味料浸腌３０分钟后，
放入热油中炸熟。
ｄ、炸好的素肉片卷起芦笋段，并
以牙签串起即可。
