主料
精白面粉250克,糯米粉70克,淀粉70克,净猪夹心肉500克,汤冻500克。
调料
熟大油50克,香油10克,白糖、酱油、盐各8克,味精10克,葱、姜汁100克。
制作过程
1.制馅心。将猪肉剁成末,取一半放于锅中,加入汤冻、盐、味精、酱油、白糖搅和,再加入葱、姜汁,拌匀上劲,再用熟大油、香油拌好。然后将汤冻捏碎,掺入肉内拌和即成馅心。
2.制饺皮。将精白面粉、淀粉、糯米粉和白糖放在一起,混合均匀,中间扒出个凹窝,先加入9成热水,拌成似片状雪花,待稍凉后再加凉水拌和揉润,搓成长条,用手揪成40个挤子,再用饺擀杖擀成薄圆形皮子。
3.包饺、蒸熟。托饺皮,放入馅心,捏成蒸饺形状,上屉,盖严笼盖,火要旺、汽要足,蒸熟取出即成。
风味特点
皮薄软润,鲜嫩可口。
