| 畜产品加工 animal product processing 以家畜的新鲜产品和副产品为原料进行加工的过程。目的在于保存畜产品的优良品质，提高其利用价值，并便于贮藏、运输，满足市场需求。畜产品加工的基本技术可概括为两方面：一是防止原始畜产品腐败变质，如卫生处理、加热杀菌、冷藏、盐藏、干藏、熏烟、密封和放射线照射等；一是提高畜产品商品价值，如着色、整形、风味改良等。按加工的对象，现代畜产品加工可分以下几类：①乳品加工。包括鲜乳的处理，如净化、消毒、冷却和冷藏等，以及各种乳制品如奶油、炼乳、干酪、乳粉和发酵乳饮料的制造等。②肉品加工。包括家畜屠宰，肉的冷却、冷藏，各种肉制品如肉品罐头、香肠、熏肉和肉松的加工制造等。③蛋品加工 。包括鲜蛋的保存和各种蛋制品如皮蛋、咸蛋、冰蛋品和蛋粉的加工等。④毛皮加工。如皮革鞣制和猪鬃、羊毛、羽毛的加工等。⑤其他副产品的加工。如骨粉、肠衣、骨胶和血粉等的加工，以及从脏器、腺体中提制生化药品等。 |
