原料:全瘦牛肉、水梨或苹果、蛋皮丝、泡菜、松子、细荞麦面条、香菜、葱、姜、酒、八角、盐、胡椒粉少许。
做法:牛肉整块烫煮2分钟后,捞出洗净。4杯水加煮肉料煮滚,放下肉块煮40分钟。取出肉块,待冷后切成薄片;牛肉汤过滤后放凉,如有浮油需撇除干净,分盛入面碗中;水滚后,放下细面煮熟,捞出沥干,再以冷开水冲凉,放入面碗的清汤中。面上再放泡菜丝、水梨片、蛋皮丝、牛肉片、炸过的松子和香菜段。
