【原料】

蟹腿肉1盒、螃蟹1只、胡萝卜1根、鳕鱼120克、海参110克、虾仁110克、蛤蜊300克、嫩豆腐1块、葱1根

【辅料】

(1)盐少许、淀粉少许

(2)盐2茶匙、酒1大匙、胡椒粉少许

(3)蛋白适量

【做法】

1 蟹腿肉煮熟、剥成丝;胡萝卜去皮,用大汤匙刮成蓉状;炒锅内放入1大匙油,先放入胡萝卜蓉,以小火炒20分钟,待其变软时,再加入蟹腿肉,即成为人工蟹黄。

2 鳕鱼切小块,放入油锅内炸至金黄色;海参切小块,放入滚水中汆烫、去腥;虾仁先洗净、擦干,再拌入蛋白与调味料(1)。

3 嫩豆腐切成8块;葱白切段,其余部分切成葱花。

4 葱段先爆香,放入蟹黄、螃蟹、鳕鱼、海参与蛤蜊,加入1碗清水,再放入豆腐与虾仁煮2分钟;最后放入调味料(2)即可。
