性质:温度对酶的反应速度有很大的影响,其相互关系为一个钟形曲线。见图。温度对酶促反应的影响有两方面:一方面,当温度上升时,反应速度加快,这与一般化学反应一样;另一方面,随温度升高而使酶逐步变性,即通过减少有活性的酶而降低酶的反应速度。酶反应的最适温度就是这两种过程平衡的结果,它是使反应速度成为最快的温度。最适温度不是酶的特征物理常数,而与酶的作用时间有关。酶可在短时间耐受较高的温度。只有时间一定,才有最适温度。
