性质:一属能氧化乙醇为乙酸并进一步为二氧化碳的、专性好氧的革兰氏阴性杆菌。细胞大小为(0.6~0.8) μm×(1.4~4.0) μm。卵圆状或杆状。不运动或有周生或侧生鞭毛运动。过氧化氢酶阳性。乙醇和乳酸是最佳碳源。在葡萄糖-酵母膏-CaCO3(GrC)琼脂上生长良好,可形成灰白色圆形菌落。分布在啤酒、果酒和花果上。会引起各种低醇酒变质。可用于酿造食醋。G+Cmo1%值为51-65。模式种是醋化醋杆菌(A.aceti)。
