陕西岐山臊子面,历史悠久,清代已经很出名,以薄、筋、光、煎、稀、汪、酸、辣、香而著名。特别是关中西部一带农村,逢年过节,婚丧嫁娶,请客待友,歧山臊子面都是绝对不可缺少的美食。歧山臊子面之所以又叫“和气面”,是和它独特的吃法有关,人们吃完自己碗里的面以后,要把剩下的酸汤再倒回锅里,也就是说大家的汤要 “混为一锅”,再用来调下一碗面。这真是 “你中有我,我中有你,不分彼此”,所以就叫做“和气面”,团结和气的意思。
歧山臊子面,是用精白面粉、猪肉、黄花菜、鸡蛋、木耳、豆腐、蒜苗等原料和多种调味品制成。基本制作工艺是:面条要用手工擀成,并达到面薄条细、筋韧光滑、软硬适度的标准。做臊子是先将猪肉切成薄片,入热油锅烹炒,同时加入生姜、食盐、调料面、辣子面和陈醋,炒透即成。把豆腐、黄花菜、木耳炒好作为底菜;鸡蛋摊成蛋皮,切成菱形小片,加切小的蒜苗作3漂菜。吃时先将面条煮熟捞入碗内,打入底菜,再浇汤,然后放臊子和漂菜。歧山面要求宽汤,即汤多面少,并突出酸辣味。所谓煎、汪即汤要烫、油要多。
