沱茶 碗型紧压茶。又称谷茶、叙府茶。主要产于中国云南、四川等地。经称茶、蒸茶、袋揉压制、定型脱袋、干燥等工序制成。具有外形呈内凹状圆碗形,紧结端正,色泽暗绿、显露白毫、汤色橙黄,香气清正,滋味浓厚甘和,耐冲耐泡等特点。饮用时多以烹煮的方法使其风味充分显露。云南沱茶(又称普洱沱茶)多以云南大叶种晒青毛茶为原料,四川沱茶则以炒青、烘青、晒青绿茶搭配为原料,所以在成品沱茶的风味上略有差异。 |
