补充资料：红槽排骨
主料
上好排骨12两（约480克），姜3片，葱3条，蒜头3粒，酒、麻油各2茶匙，蛋白2只，生粉3汤匙，油3杯，青瓜1/2个。
配料
腌排骨料：盐1/2茶匙，糖3/2汤匙，红酒糟2汤匙。
做法
1、排骨洗净抹干，切成6厘米长条，加腌排骨料拌匀，腌1小时。
2、姜、葱均切丝，蒜去衣剁成茸，青瓜切片。
3、蛋白打匀，加入生粉搅成蛋糊状，放下油1茶匙再拌匀，候用。
4、烧滚油，将排骨沾匀蛋糊，立即放入滚油中，改中火炸至排骨将熟，再用旺火炸片刻，取出沥去油。
5、烧热少许油，爆香姜、蒜茸、麻油，将排骨回镬，洒入酒，加入葱，迅速兜炒几下，即可上碟，伴上青瓜片。冷吃热食俱佳。
备注
排骨将熟时改用旺火炸片刻，可将排骨内的油迫出来。
