| 家禽 poultry 经人类长期驯化培育、生存繁衍，并具有一定经济价值或玩赏价值的鸟类。如鸡、鸭、鹅、火鸡、鸽、鹌鹑、鸵鸟等。和家畜相比，家禽具有繁殖能力强、生长快、成熟早 、饲料转化率高、适应范围广、饲养管理简单方便等特点。经营家禽生产的行业称养禽业，养禽业是一个投资少、生产周期短、资金周转快、经济效益高的生产部门。家禽提供的禽蛋、禽肉营养价值高，富含易被人们消化吸收的蛋白质、氨基酸、维生素和矿物质，并有一定的微量元素。家禽的羽 、绒保温性强，轻便耐用，是轻工业的重要原料，用以制作羽绒服装和被褥等。禽粪中的氮、磷、钾成分含量高于家畜 ，是优质粪肥，也可用作家畜的饲料。中国养禽业发展较早 ，殷商时期的甲骨文字中已有“鸡”字。经过长期选育、繁殖，家禽品种资源丰富，品种优良，如狼山鸡、北京鸭、中国鹅等都是世界著名的优良品种。20世纪70年代以后，通过引进良种、选育优良禽种，建立大型机械化商品鸡场和配合饲料加工厂，以及发展专业养鸡户等措施，禽、蛋生产日益增长。 |
