花江炒粉是用本地生产的米粉片，切细成丝，如筷子粗细的扁形粉条，用猪油、瘦肉、筒筒辣子再加上葱、蒜、番茄、味精等猛火炒成。抬上桌时不用碗装，却用盘盛。色鲜味美，入口经嚼，咸辣适度，非常可口。这种食物在花江、关索、永宁等镇的饭馆中均有，是其他地方未闻难见的独特风味小吃。
这种炒粉，是在磨蒸米浆时原料配制有方。花江、关索一带掌握了这种传统的诀窍，所以粉片粉丝的筋丝特好，能经水煮油炒而不断成小节。这种粉片粉丝，可以凉拌而食，味亦极美。
