每糯米七升，配白饭米二升，清水淘净。泡隔宿捞起，舂粉筛细，配白糖五斤（红糖亦可），浇水拌匀，以用手抓起成团为度，不可太湿。入笼蒸之，俟熟倾出凉冷，放盆内，用手极力揉匀，至无白点为度。再用笼圈安放平正处，底下及周围俱用笋壳铺贴，然后下糕，用手压平，去圈成个。
