性质：细胞去除水分后的净重量，一般为湿重的10％～20％。在研究微生物的生长、发酵及其条件中，细胞干重是重要的测定参数。获得细胞干重的方法有二。(1)离心法：将待测培养液放入离心管中，反复作离心、清水洗涤三次后，进行干燥；干燥温度可采用105℃、100℃或红外线烘干，也可在80℃或40℃较低温度下进行真空干燥，然后称重。每个细菌细胞约重10-12～10-13g。(2)过滤法：尤其适用于丝状微生物如放线菌或真菌的干重测定，培养液用滤纸过滤后，留在纸上的菌丝体先用适量清水洗涤，再用上法烘干后称重，以最常见的大肠杆菌(Escherichia coli)为例，在液体培养物中，细胞的浓度一般为2×109个/ml，100ml培养液可得10～90mg干重细胞。
