材 料:
新鲜鲈鱼1条(700~1000克),葱、姜、红尖椒、绿尖椒、香菜。
调 料:
海鲜汁、大桥牌鸡粉3克、料酒、大桥牌粟粉、花生油、蛋清。
做 法:
1、鱼加工好,洗净,片下鱼身两侧的鱼肉,再把鱼肉片成长3厘米、宽2厘米、厚0.2厘米的大片,鱼肉片放入碗中,调好口味,加蛋清、大桥牌粟粉抓匀备用。
2、片下鱼肉的鱼骨架(连头带尾)加盐、大桥牌鲜味王、料酒入 味,加大葱、姜、入笼蒸熟取出。
3、鱼片放在三成热的油中滑出,整齐地摆在鱼骨架上,撒上葱丝、姜丝、尖椒丝、香菜段、淋上海鲜汁,锅内加花生油75克, 烧热后浇在鱼身上即成。
