性质:又称紫草宁(shikonin)。赤褐色针状晶体(由苯重结晶)。熔点149℃。旋光度-167°±10°(在苯中)。能溶于普通有机溶剂,以及甘油动植物油脂和碱性水溶液。难溶于碳酸氢碱溶液。与氢氧化碱金属作用显蓝色。为植物色素之一种。存在杉紫草(Alkannatinctoria Tausch)中。一种中国传统应用的天然食用色素。色调随pH值而变化:pH值4~6呈红色,7呈红紫色,8呈紫色,9呈蓝紫色,10呈蓝色。遇铁离子变深紫色。由紫草根以乙醇,食用油萃取而得。中国传统直接应用紫草根,以热油萃取,与辣椒粉混合熬制成酱。用于椒酱肉、回锅肉,辣味鸡等的着色。因能溶于油脂,可作为油脂检测试剂,用于生物学显微检查。
