俗话说:番茄炒蛋,最不下饭。虽然营养专家一再把番茄炒蛋捧为最佳营养搭配食品,可在我眼里,它那酸酸甜甜的口味,汤汤水水的样子,简直让人难以入口。不过营养专家的忠言还是要听的,我现在就在番茄炒蛋的制法上,翻新创出了一系列的家常开胃炒蛋,如泡椒炒蛋、青椒炒蛋、苦瓜炒蛋、野山椒炒蛋……其中最值得一提的可能还要算酸豇豆炒蛋了。

原料:

鸡蛋4个 酸豇豆100克 野山椒10克 葱花8克 精盐、精炼油各适量

制法:

1.鸡蛋磕入碗中,加入精盐搅匀;酸豇豆切成粒;野山椒剁细成茸。

2.净锅上火,放入精炼油烧热,先倒入鸡蛋液,炒至蛋液凝结成块后,盛出。接着将酸豇豆、野山椒倒入锅中翻炒,待出香味后,倒入炒好的鸡蛋一起炒匀,最后撒入葱花,起锅装盘即成。

特点:

鸡蛋鲜香,酸辣开胃。

说明:

此菜烹法简单,如你不觉得麻烦,还可将酸豇豆、野山椒茸一同调入蛋液中,煎成圆饼状的酸豇豆煎蛋。
