慈姑 Sagittaria sagittifolia;arrowhead 泽泻科慈姑属宿根性水生草本。又称剪刀草、燕尾草等。以球茎作蔬菜食用。植株高约1米。叶戟形,为根出叶,具长柄。短缩茎,秋季从各叶腋间向地下四面斜下方抽生匍匐茎。顶端着生膨大的球茎,呈球形或卵形。顶芽尖嘴状。总状花序,雌雄异花。栽培的慈姑有中国慈姑、日本慈姑和美国慈姑3个变种。性喜温暖,用顶芽繁殖。球茎形成期适温为10~20℃。昼夜温差大,日照良好,有利球茎发育。球茎自膨大至成熟约需25~40天。栽培时切取球茎成熟、肥壮的顶芽,进行扦插育苗。新叶、匍匐茎抽生时追施氮肥;球茎膨大前增施磷、钾肥。主要害虫有蚜虫、稻飞虱等,病害有黑粉病、叶斑病等。慈姑球茎可煮食或加工制片、制粉等。
