雪蒸糕法
每磨细粉，用糯米二分，粳米八分为则。一拌粉，将粉置盘中，用凉水细细洒之，以捏则如团，撒则如砂为度。将粗麻筛筛出，其剩下块搓碎，仍于筛上尽出之，前后和匀，使干湿不偏枯，以巾覆之，勿令风干日燥，听用（水中酌加上洋糖，则更有味。拌粉与市中枕儿糕法同）。一锡圈及锡钱，俱宜洗剔极净。临时，略将香油和水，布蘸拭之。每一蒸后，必一洗一拭；一锡圈内将锡钱置妥，先松装粉一小半， 将果馅轻置当中后，将粉松装满圈， 轻轻搅平，套汤瓶上盖之，视盖口气直冲为度。取出覆之， 先去圈，后去钱， 饰以胭脂两圈，更递为用。一汤瓶宜洗净，置汤分寸以及肩为度，然多滚则易涸，宜留心看视，备热水频添。
