寿面酱汁 50㏄
冷开水 100㏄
制作：
(1)寿面放入沸水中煮开，约1分钟後，捞出迅速用冷水沖凉，再放入冰水中冰镇3分钟备用。
(2)将蛋打散，加入少许盐调味，用平底锅煎成蛋皮，折三折後再切成蛋丝备用。鱼板切丝、生菜叶也切成细丝备用。
(3)将调味料拌匀，即为酱汁。梅子去核後，将梅肉切碎备用。
(4)将生菜丝铺在盘子上，再将寿面放入，上面铺上蛋丝、鱼板丝，小黄瓜片则插入寿面中，淋上酱汁，最上面放上梅子肉，吃的时候拌匀即可。
