原料：
苹果,白糖,油,蛋
制作：
将苹果去皮，去核，切成菱角块或桔子瓣块；用三个蛋清抽打成泡沫糊，加淀粉25克、面粉25克，在沾糊以前，先在改好刀的苹果块上洒层干面粉，再沾糊下油锅炸；油勺内放入油1000克左右，烧到五、六成热时，逐块将沾好糊的苹果块下勺，炸到白黄时捞出；另取勺，放半勺水，加100克白糖，不断搅动，视糖浆熬到金黄色时，下主料挂浆，将勺端离“火眼”颠翻七、八下，挂勺后出勺便可。
