主 料：
鲜鱿450克，熟鲜笋肉50克，浸发香菇20克，红辣椒5克，葱段50克，味精3.5克，鱼露10克，胡椒粉0.5克，芝麻油0.5克，绍酒10克，湿淀粉15克，上汤50克，生油500克(耗75克)。
制作方法：
(1)将鲜鱿洗净，用竖刀从头部右上方起斜着向下至尾部刻斜纹(刀距约2至3毫米)；把鲜鱿调转，再由尾部右上方起斜着刀向下切斜纹，每距3厘米切出一块。把香菇、辣椒切块。笋肉刻花后，切成2毫米厚的片。
(2)将上汤、味精、鱼露、胡椒粉、芝麻油和湿淀粉7.5克调成芡汁。把湿淀粉3.5克和鲜鱿拌匀。
(3)笋花放入沸水锅里焯约1分钟，倒入漏勺沥去水。
(4)用中火烧热炒鼎，下油500克，烧至五成熟，放下鲜鱿过油约半分钟，倒入笊篱沥去油。炒鼎放回炉上，下油15克，放入葱、笋、香菇。辣椒略炒，加入鲜鱿，烹绍酒，用芡汁勾芡，最后加油25克炒匀上碟即成。
特 点：
爽脆、鲜美、馥香，鲜鱿经过细致刀工，形如麦穗，故名。
