补充资料：萝卜丝烙
萝卜丝烙
主料： 萝卜400克，芹菜梗15克，鱼露12克，味精6克，胡椒粉0.2克，生粉50克，澄面粉50克，生油100克。
做法： 1、先将萝卜刨去皮，洗净后放在砧板上用刀切成细丝，用不锈钢汤盆盛着，加入味精、鱼露搅拌均匀，使其静置10分钟，让萝卜丝受咸汁刺激出水。再用刀将芹菜梗切成细粒放入萝卜内，同时把生粉、澄面粉投入一起搅匀待用。
2、将不粘平面鼎洗净，烧热放入生油20克，然后将已调好的萝卜丝倒入鼎内，先把萝卜丝搅匀使其糊化，再抹平。然后用中慢火煎烙，边煎边放进生油，煎烙一面后翻转过来再煎烙，煎烙至熟透即成。
特点： 清鲜嫩滑，原汁原味。
