以贵州省织金矿区四个含煤向斜构造单元勘查资料为基础,对该区晚二迭世晚期沉积特征进行分析,认为区内广泛发育砂泥潮坪相和碳酸盐潮坪相。

织金矿区大冲头井田地处纳雍织金凹褶断束东翼阿弓向斜的中段,井田总体构造形态为轴向NE的不对称向斜,断层发育,以走向NE、落差<20m的小型正断层为主,主要分布在井田的四个角、向斜两翼煤系地层出露地段及南东翼煤系地层较浅部位,对+1 350m水平以上的煤层有影响;褶皱主要分布在阿弓向斜南东翼和井田东北、西南角,挤压带次级褶曲对煤层影响较大。

原料及调料:荞麦、黄豆、泡酸萝卜、黑大头菜、折二根、麻油、花椒油、酱油、霉豆腐(豆腐乳)、醋、糊辣椒面、味精、姜汁、蒜水、芜荽、葱花等适量。
制作方法:
1,荞麦打去壳,干磨成粉加水和适量的明矾水调匀,荞粉与水的比例为1:4,下锅用微火慢慢边煮边搅熟了离火,倒入搪瓷盆内冷却,冷透了形成荞凉粉备用。
2,黄豆淘洗干净用干锅炒熟,泡酸萝卜、黑大头菜切成碎丁,折二根洗干净切成8毫米左右短节,芜荽、葱花切碎,姜、蒜剁成碎末用冷开水泡成姜汁、蒜水备用。
3,食用时翻倒出来放在案板上,用特制的刮子把荞凉粉刮成细长条装在盘子里,用另一小碗放入酥黄豆、酸萝卜丁、黑大头菜丁、芜荽、葱花、红油、麻油、花椒油、霉豆腐、酱油、醋、姜汁、蒜水、味精等调料兑成蘸水,用荞凉扮蘸着食用。
风味特色:辣香爽口,生津解暑,清凉降火。
技术要领:黄豆要不放油干炒,荞粉与水的比例必须准确,明矾水不能过多。
