性质:一类用于食品酸化的食用酸,作为食品添加剂,兼用很多功能。包括风味剂(赋予碳酸饮料、果汁饮料、甜点食品以酸味),防腐剂(防止腐败微生物的生长,抑制酶的活性),螯合剂(螯合可引起氧化和变色的金属),缓冲剂(控制酸度),凝及剂(控制酱状食品中果胶,海藻胶等的胶凝机制),凝结剂(乳蛋白,大豆蛋白的酸凝结沉淀等。对食用酸的选择,应按用途考虑到风味模式、pH、溶解度及溶解速率、吸潮性、化学活性等。常用的食用酸有柠檬酸、苹果酸、葡萄糖酸、乳酸、酒石酸、磷酸、富马酸、已二酸、丁二酸等。
