With 20 varieties of wheat grown in the same environment as experimental material,two main components of pentosan in wheat grains,xylose content and arabinose content were measured,and their relationship to the viscosity of the extract of the wheat grains with sodium hydroxide(NaOH) was investigated by correlation and path analysis.
