1、生干虾仁。
将新鲜次对虾放在清洁的海水中浸泡15小时左右，捞出后掐去虾头，扒去盖皮和腹皮，然后小心扒掉虾尾皮，不要带掉尾梢，用水洗净，摆晒到席子上，随时翻动，晒至全干。
质量要求：虾粒基本完整，干燥均匀，呈淡黄色，无泛盐现象。
2、熟干虾仁。将鲜次对虾洗净，加3％～5％精盐，放入锅中蒸煮8～10分钟，煮熟后，掐头、扒皮、晒干即可。
