调料:盐0.5克,味精1克,酒0.5克,姜少许。
制法:1、银雪鱼加酒、姜,上笼蒸熟,去骨、去皮,取净肉,冷却待用。2、将肉皮熬成肉皮冻。3、取一小碗,放入银雪鱼,加入熬好的水晶皮冻,冷却后即可。
特点:色泽银白,咸鲜味美。
